Roo Stew Dumplins’

No pictures for this one – it’s not very comfortable in front of the cameras – just a delicious roo (yes – kangaroo – not Skippy but certainly related) stew dumpling type meal that makes for grand comfort food.

Ingredients – dumpling

  • 375g self-raising flour of your choice
  • 125g chopped oats
  • 65g cold, cold butter – particularly here in the tropics
  • 75g sharp cheddar – or other cheese to your liking – this is for flavour more than a  melty, cheesy texture – grated
  • 1 egg, biggish
  • 1 cup soya – or moo if you prefer
  • 2tsp coarsely ground pepper
  • big pinch of salt
  • handful or two of whatever herb(s) is/are available – I used parsley and coriander – chopped

Instructions – dumplings

  1. chop cold, cold butter into smallish knobs
  2. put flour into bowl, toss in butter
  3. mix butter and flower with your hands until well combined
  4. add salt, pepper, cheese and keep mixing with your hands until further combined
  5. add egg, soya (or moo…) combine with favourite spoon (mine’s wooden) until well mixed

Ingredients – Roo Stew

  • 1.5 litres roo stew – I get mine from the fridge*

Instructions – Roo Stew Dumpling

  1. preheat oven to 200C
  2. place half of the roo stew into a large baking dish
  3. break dumpling mixture into peach sized chunks and place on top of the roo stew
  4. cover all of that with the rest of the roo stew
  5. bake for 30 minutes
  6. let cool for as long as you can wait to
  7. nom out

*not to worry – I’ll post that recipe at later date
