Chocolate Cheesecake – Recipe

This is the richest version of  chocolate cheesecake that I have ever made – half a small version or a wee slice of the large version is more than enough – though I couldn’t stop at just half a small version.

  • 8 small ramequins or
  • 1 large (20cm) baking dish

  • 500 grams cream cheese
  • 125 grams caster sugar
  • 5 eggs
  • 175 grams dark chocolate
  • 2 (heaped) tablespoons dark cocoa powder

  • pre-heat over to 160ºC
  • sit cream cheese on the bench until it is room temperature
  • beat cream cheese and sugar until smooth
  • add eggs to mixture one at a time until well combined
  • pour melted chocolate into mixture, beat until well combined
  • add dark cocoa powder to mixture, beat until well combined
  • spoon mixture into ramequins lined with baking paper until 3/4 full or
  • spoon mixture into large baking dish lined with baking paper
  • bake for 1 hour
  • allow to cool on bench
  • refrigerate over night (if you can wait that long – it really is better the next day)
  • eat
