Rhubarbarita: A Recipe

This is a recipe that Cathy has made for me more than a few times – and I’m sharing it here for your drinking pleasures.

    ‘gredients – rhubarb syrup

  • 1/2 kilo rhubarb, chopped into thumb-sized pieces
  • 1/2 kilogram sugar (of your choice)
  • 1/2 litre water
    ‘structions – rhubarb syrup

  • boil sugar and water until sugar dissolves
  • poach rhubarb in sugary watery until rhubarb is soft and liquid becomes a beautiful rhubarby colour
  • strain rhubarb, resulting in rhubarb syrup
  • (strained rhubarb can be served with ice cream, custard or used in a recipe of your choice)
    ‘gredients – rhubarbarita

  • 2/5 rhubarb syrup
  • 2/5 tequila
  • 1/5 fresh lime juice
  • a few handfuls of ice
    ‘structions – rhubarbarita

  • place rhubarb syrup, tequila, lime juice and ice in a cocktail shaker
  • shake vigorously
  • strain liquid into large pitcher, removing ice
  • serve in the campest glasses you can locate
  • drink!
  • repeat drink! until finished

    Thanks Charles,
    Rhubarb is one of my favorite vegetables. This libation sounds delish and from the picture looks pretty good too.
    I never had rhubarb growing up, the first time I had it was visiting a friend’s farm while on liberty from the Navy, years and years ago. His mom made us a Rhubarb pie and we sat there at ate the entire thing. It was heavenly and I have been a Rhubarb lover ever since.

    It’s a beaut vegetable – good in so many things.

    (You can use the rhubarb for a pie after you make your rhubarbaritas.)
