Gary Ray’s Biscuits & Gravy

Gary Ray's Biscuits (scones, heart-star shaped) with Gravy
No, these aren’t really Gary Ray’s Biscuits & Gravy – they are mine.

However, it was thanks to Gary Ray that I re-discovered my love of this scrumptious comfort food: the recipe below is not Gary Ray’s recipe, but my adaptation of his recipe. I limit this scrumptiousness to once a fortnight such that I can properly enjoy it and not become too much of a one-meal piglet. It’s one of the many meals that the younger lad likes cooking with me and I’ve had the pleasure of sharing it with Noya, who also remembers it from her time in the South of the USA.

‘gredients – biscuits

  • 2 cups self-raising flour
  • 1 cup milk
  • 30 grams butter

‘structions – biscuits

  • preheat oven to 220ºC
  • line cooking tray with baking paper
  • sift flour into bowl
  • combine butter and flour using your fingers (or a pastry cutter, if you’re fussy)
  • add milk, combine
  • put dough onto a floured surface, knead lightly
  • leave to rest for 10 minutes
  • cut into circles using a round cutter or squares using a knife
  • (in the image above, I used a star-shap cutter – because I could!)
  • place onto baking paper on baking tray
  • put into oven
  • bake for 15 minutes or until golden brown on top
  • remove from oven
  • cool on a wire rack

‘gredients – gravy

  • 1/2 kilo pork mince
  • 1 tablespoon dried sage
  • 2 tablespoon fresh sage
  • 2 tablespoond coarsely cracked pepper
  • 3 tablespoons self-raising flour
  • 1 litre milk

‘structions – gravy

  • mix pork, sage and cracked pepper
  • heat your frying pan
  • break pork mixture into small pieces, place in frying pan
  • cook pork until brown, chopping into as small pieces as you can manage
  • when pork is browned, coat with flour
  • mix pork and flour until well combined
  • add milk, stir until thickened

Serve either a bowl of gravy and add the biscuits as to your liking or place biscuits into your bowl and pour the gravy on top: horses for courses!
