Date Loaf: A Recipe

More Date Loaf
This is one of my favourite things to bake and I’m posting this specifically for Furious Fossa because I said I would.

‘gredients

  • 2 cups dates, pitted, chopped
  • 1 cup nuts, chopped
  • 1 cup crystalised ginger, chopped
  • 2 bananas, smashed
  • 1 heaped tablespoon ginger powder
  • 1 heaped tablespoon cinnamon
  • 1 heaped teaspoon nutmeg
  • 2 cups self-raising flour
  • 2 eggs, beaten
  • 1 cup milk
  • 1/2 cup muscovado sugar
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla bean paste

‘structions

  • Preheat oven to 180ÂșC
  • Combine all dry ingredients in a bowl, mix
  • Add all wet ingredients, mix
  • Place baking paper into pan
  • Place mixture on top of baking paper in pan
  • Bake for 40 minutes
  • Check to ensure loaf is cooked – cook for 5 more minutes if not (repeat as necessary)
  • Remove from oven, let sit as long as you can
  • Slice, eat
  • Save some for later (if you can)
