Ginger & Date Loaf

Ginger & Date Loaf
This is one of my many favourite things to bake.

‘gredients

  • 2 cups dates, pitted, chopped
  • 1 cup crystalised ginger, chopped
  • 1 big knob of fresh ginger, grated
  • 1 heaped tablespoon ginger powder
  • 1 heaped tablespoon cinnamon
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 bananas, smashed
  • 2 eggs, beaten
  • 1 cup milk
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla bean paste

‘structions

  • Preheat oven to 160ºC (fan forced, 180ºC otherwise)
  • Properly smash the bananas in a mixing bowl, add eggs and milk, mix
  • Add all the remaining ingredients, mix
  • Place baking paper into pan
  • Place mixture on top of baking paper in pan
  • Bake for 40 minutes
  • Check to ensure loaf is cooked – cook for 5 more minutes if not (repeat as necessary)
  • Remove from oven, let sit as long as you can
  • Slice, eat
