With many thanks to Tara for the recipe upon which this concoction is structurally based.
‘gredients
- 500 grams macadamia nuts
- 500 grams walnuts
- 500 grams dried figs
- 500 grams dried cranberries
- 1/2 cup honey
- 1 cup orange blossom water
- 1/2 cup coconut oil
- 1 tablespoon vanilla bean paste (or essence)
pre ‘structions
- rinse nuts, figs and cranberries before soaking
- after soaking, keep this juice to make a cordial
- for cordial
- the above juice, boiling
- two cinnamon quills, crushed coarsely
- small handful of cardamom pods, smashed about a bit so the seeds pop out
- 5 star anise, crumbled into big bits
- add above spices, let boil for five minutes, reduce to a simmer
- cool
- store for serving with cake later
‘structions
- soak nuts, figs and cranberries in boiled water for a few hours
- drain water
- Bottom layer:
- in food processor, blend to paste for half the walnuts and all the figs
- press this mixture into your container (I’m using 8 small springform pans)
- put in freezer whilst you work on
- Middle layer
- in food processor, blend to paste all the macadamia with the honey, orange blossom water, coconut oil and vanilla
- remove containers from freezer and layer this mixture onto the base
- put in freezer whilst you work on
- Top layer
- in food processor, blend to paste the rest of the walnuts and the cranberries.
- remove containers from freezer and layer this mixture onto the middle layer
- Put back in the freezer overnight
- Put in fridge the next morning
- Remove from fridge
- Consume as desired
